Ingredients:
1 can Black Beans, drained & rinsed
- 1/3 cup Corn
- 12 Roma Tomatoes, diced
- 2 Avocados, diced
- 1 bunch Cilantro, chopped
- 1 bunch Green Onions, chopped
- 1T Lemon Juice
- Salt, Cumin, and Chili Powder to taste (start with 1/2 t each)
Mix everything together and season to taste. Serve in a pita or with tortilla chips for a quick, yummy lunch!
